Menu Directory: Assorted Menu Selections

The following is a sampling of dishes compiled from the many customized menus Chef Elizabeth has created for her Meal Service clients. All dishes subject to local food availability.

 

Roast 1/4 Chicken with Cranberry Gravy & Traditional Sage Bread Dressing

 

Asian Stir Fried Chicken & Broccoli with Black Beans & Mushrooms

 

Texican Shredded Pork
Tender pork cubes slowly simmered in a tangy tomato sauce, then shredded.  Served with flour tortillas, salsa and sour cream.

 

Cabot Cove Seafood Stew
This is a lovely combination of prawns & scallops with mushrooms, white wine, tomatoes and herbs.

 

Fragrant Beef Curry (Veg. version available)
Coconut milk and mango chutney make this wonderful Indian style curry dish extra special.

Black Bean & Chicken Enchiladas (Veg. version available)
Chicken breast strips, beans, Monterrey Jack cheese and red bell peppers in a delicious Mexican style salsa, wrapped in flour tortillas then topped with more cheese and sauce and baked in the oven.


Aloo Gobi (V)
This is a very fragrant Indian curry with cauliflower, sweet potatoes and chickpeas in a tomato broth.  Enjoy it with Basmati or Jasmine rice.


Salmon in Potato Leek Crust
A delicately seasoned salmon fillet nestled on a bed of shredded potatoes!

Caramelized Onion Meatloaf
Made with lean ground beef with grilled onions baked right in.


Tuscan Chicken Vegetable Soup (Veg. version available)
A delicate homemade chicken broth with Rosemary, veggies and white beans


Mulligatawny Soup (Veg. version available)
A wonderful mealtime curry soup with chicken, apples and rice. 


Pork Stew with Apricots & Dried Plums
A lovely meal with lean pork loin, in a broth seasoned with cinnamon, ginger and coriander.  Wonderful over rice with a green salad.


Roasted Pork Tenderloin with Caramelized Onions
They keep asking for it!  Tender slices of lean roast pork topped with a sweet onion sauce


Thai Meatballs in Coconut Cream Sauce
These zesty beef meatballs are made with fresh basil and a touch of ginger.


Tomato, Garlic & Potato Frittata (V)
A delicate combination with the addition of fresh basil makes this egg frittata a nice light meal.

 

Chicken Mediterranean
Baked chicken breast with roasted garlic, Greek olives & Portobella mushrooms in a fresh basil tomato sauce.


Scalloped Potato Topped Chicken & Vegetable Hot Pot
A medley of leeks, parsnips, carrots and celery with chicken breast pieces in a light sage sauce, topped with golden brown sliced potatoes.


Spinach Stuffed Pasta Roses (V)
Lasagna noodles filled with spinach and herbed cream cheese are baked in an Italian tomato sauce.


Rich Beef & Mushroom Goulash
Tender cubes of beef slowly simmered in a rich red wine sauce with and field mushrooms.

 

Citrus Roasted Salmon
Atlantic salmon marinated in lemon, lime and orange with fresh dill.

 

Pork Picante
Cubes of pork tenderloin simmered in a slightly sweet & spicy apricot- tomato sauce.

The classic heart warming dish!


Hot and Sour Noodle Soup (Veg. version available)
Fresh ginger and sesame oil give this slightly spicy and tangy soup/stew real punch.  A mix of lightly sautéed veggies and grilled chicken make this a meal. 

Thai Red Curry Coconut Chicken in Peanut Sauce
Fresh roasted peanuts in a spicy sauce with snowpeas, carrots and mushrooms.


Asian Style Beef & Broccoli with Green Onions
Thinly sliced sirloin marinated in a blend of soy sauce and sesame oil, then stir fried with broccoli and served in a zesty ginger sauce.  This is served with sticky rice.


Chicken Lasagna Bake
Layers of noodles filled with diced chicken in a rich creamy sauce, then slowly baked and topped with Mozzarella and Cheddar.  Mmmm!


Korean Marinated Beef Skewers
This traditional slightly sweet Korean dish has hints of ginger and garlic. These tender sirloin slivers are skewered and barbecue ready! 


Scallion Mushroom Chicken en Papillote   
Marinated boneless chicken breast topped with mushrooms in a light soy-ginger sauce and steamed in a parchment package.


Sweet & Sour Chinese Pork or Chicken
Tender strips of chicken breast or pork loin with mixed bell peppers and pineapple in a zesty broth based Chinese sauce.


Creamy Chicken Stew with Dumplings
Cubes of tender white and dark meat simmered with vegetables in a light cream sauce are then topped with homemade flour dumplings.


Traditional Meat Lasagna with Spinach
Layers of noodles and homemade meat sauce are stacked with spinach and Ricotta and then topped with Italian cheeses. 


Pork Marsala
Thin slices of pork loin are simmered with sweet Marsala wine and mushrooms in this delicious classic Italian dish.


Classic Beef Stew
Delicious cubes of beef, potatoes, carrots, turnip and celery are slow cooked in a lovely beef gravy.


Creamy Chicken Brie
Boneless chicken breasts and fresh green beans are baked in a creamy Brie cheese sauce. 


Tex Mex Lasagna (Veg. version available)
A wonderful medley of seasoned ground meat, bell peppers, pinto beans and corn, layered with cheese and flour tortillas and then baked.

 

Chicken & Mushroom Risotto with Peas (Veg. version available)
This comforting Italian dish is simmered with chicken broth and sauvignon Blanc and is done with marinated chicken breast.
